I love banana bread, but I don’t love making it, so I had to find a way to make it.
Banana Bread Ingredients 2 large eggs (I used whole wheat) 1 1/2 cups all-purpose flour 1/4 teaspoon salt 1 cup whole milk (or 1 cup water) 1 teaspoon vanilla extract 1 teaspoon baking powder 2 cups whole milk 2 cups all purpose flour 1 cup sugar 1 teaspoon cinnamon, or to taste 1 1 / 2 teaspoons baking soda 2 cups powdered sugar (or cornstarch) Directions Preheat oven to 375 degrees F. Lightly grease a 9×13 pan.
Place all of the ingredients in a bowl.
Beat egg whites and sugar for 2 minutes until stiff peaks form.
Beat in flour, salt, and vanilla extract.
Beat for 1 minute more.
Add in milk, and mix until well combined.
Mix in milk and sugar.
Fold in baking powder, baking soda, and cinnamon.
Mix until combined.
Spoon batter into prepared 9×10 pan.
Bake for 25 minutes.
Let cool before slicing.
To Serve: Spoon banana bread into serving bowls and top with chocolate frosting and fresh berries.
Notes I used all-spice berries because I am a spice fiend, but any berries will work.
