What you need to know about homemade banana bread
This week we’ve got a whole bunch of homemade banana products, but the one we’re focusing on is this super simple homemade banana loaf.
This recipe uses ground pecans instead of the flax seeds you might find in the supermarket, but if you want to get a little more protein and fiber, pecannos are great.
It’s an easy, healthy, and delicious loaf that is gluten-free and low-carb, and it’s a great way to use up some leftover bananas.
It will be a great addition to any banana bread recipe or freezer staple.
Prep Time: 15 minutes Cook Time: 10 minutes Total Time: 30 minutes Servings: 2 Ingredients 1 large banana 1 cup almond flour 1 tablespoon cornstarch 1 teaspoon baking soda 1 teaspoon cinnamon 1 teaspoon salt 1/4 cup honey 1/2 cup granulated sugar 1 cup water 1 tablespoon cinnamon, ground 1 1/3 cups pecannon 1/8 cup dried cherries, raspberries, or other fruit (optional) Directions Place the banana in a food processor and pulse until smooth.
Add the almond flour, cornstach, baking soda, cinnamon, salt, and honey and pulse a few times until combined.
Process until a dough forms.
Place the dough in a lightly greased bowl.
Cover and let rise for at least 10 minutes, or until doubled in size.
After 10 minutes of rising, remove from the bowl and pat into a greased cookie sheet.
Bake at 375 degrees for about 10 minutes or until golden brown and the tops are lightly browned.
Remove from the oven and let cool.
While bananas are baking, make the glaze.
In a small saucepan, bring the water to a boil over high heat.
Once boiling, reduce the heat to medium and cook the glazed bananas for 1 minute.
Remove the glazes from the heat and allow to cool to room temperature.
To make the filling, whisk together the honey, sugar, cinnamon and pecan nuts until smooth and slightly sweet.
Spoon the glazing over the bananas and top with cherries.
